Sorrel, Rumex Acetosella or Rumex Acetosa

There are many edible varieties of sorrel. Both grow in cultivated and recently filled soil, neglected fields and old grasslands.

The leaves have a sour or acid taste and are best for salads when gathered young and small. Cooked and pureed sorrel is good with fish.
