Stuffed Choux, Puff Paste or Pate Shells
Bake: 1-inch Choux Paste Shells or Bouchees. Split them on one side. Fill them with one of the softer fillings, see:

Reheat the puffs in a 425° oven.
II. For a marvelous tea-teaser, put into the base of a small cream puff shelf a layer of:
Whipped cream
Lightly insert with the pointed end up:
A flawless ripe strawberry
III. Or, fill the puffs with:
Soft cream cheese
A dab of bright jelly
