Candied Citrus Peels (Method 4)
Place 2 cups of sugar in a bowl. Pat each peel dry, and immerse it in the sugar till well coated. Try to avoid getting large clumps of sugar on the peels.
Place the peels on a wire rack, and let them dry overnight. You can also dry them in die oven:
Place die sugar-coated peels on a cookie sheet lined with baking paper. Place the cookie sheet in a 200°F (93°C) oven for approximately one hour.
Check every twenty minutes to ensure that the peels aren't burning or cooking in any way.
