Candied Citrus Peels (Method 2)
Wash fruits well. Use a paring knife to cut off a little skin from the top and bottom, so the fruit will stand straight. Then make lengthwise slits in each fruit, cutting through the peel but not into the fruit.
Using your fingers, gently remove the peels. (Reserve the fruit for something else.) With a sharp knife, cut away the bitter, white pith from the underside of the peels.
Don't worry if small amounts of pith remain, as long as most of the peels are scraped clean. Slice the peels into long, thin strips, approximately 3/8" wide.
