Candied Citrus Peels (Method 1)
The Italians are famous for their candied fruits and citrus peels, which are enjoyed in desserts and also as quite satisfying little treats. Before you eat any citrus fruit, get into the habit of peeling it carefully and freezing the rind for later use.
Candied citrus peels make for a sweet, refreshing nibble when another cookie would be too much. They're sold at gourmet and specialty shops in a variety of flavors as well as plain or chocolate-dipped.
Candied peels dipped in chocolate — the darker the better, unless you're a white chocolate fan — add a velvety zing to desserts or are perfect on their own with coffee or tea.

1. 2 grapefruits or 3 oranges or 4 lemons

3. 2 1/2 cups sugar
4. 4 Tbsp light corn syrup
